Food Friday Recipe: Maple Chipotle Breakfast Sausage


2 lbs ground pork

1 tsp brown mustard seed, lightly crushed

1 Tbsp yellow mustard seed, lightly crushed

1/2 tsp mace 

2-3 cloves garlic, minced 

1 Tbsp kosher salt 

1 tsp white pepper 

1-2 tsp chipotle flakes or powder, depending on level of heat desired

2 tsp ground ginger 

3 Tbsp maple syrup


Combine all ingredients and mix thoroughly for five minutes, until the meat becomes slightly sticky. Cover and refrigerate for at least one hour, or up to twelve hours. Form into patties and cook on a griddle or pan over medium low heat, taking care not to burn the maple syrup.
