Cornell University operates a maple research forest in Lake Placid. The manager of that sugarbush, Michael Farrell, has written a new book: The Sugarmaker’s Companion: An Integrated Approach to Producing Syrup from Maple, Birch and Walnut Trees looking at the management and economics of sugaring.
About three years ago, Cornell University Uihlein Maple Research Forest Director Michael Farrell was approached by an editor who asked him to write a book giving a modern-day spin on maple production. His book starts by explaining why everyone should get into sugaring, but then moves to the brass tacks of practical production.
In part two of his conversation, Michael Farrell talks about tapping different types of trees and marketing new types of syrups.
