Today on Food Friday, three cooks and vegan enthusiasts join WAMC's Ray Graf to discuss vegan cuisine, the diet's health benefits and plant-based cooking. 

Linda Soper-Kolton is a vegan chef, culinary instructor and certified health coach. Sara Boan is a vegan chef and culinary instructor. Kathy Stevens is the founder of the Catskill Animal Sanctuary. The three worked together to release the Sanctuary's first cookbook, Compassionate Cuisine: 125 Plant-Based Recipes from Our Vegan Kitchen
