Albany, NY – It's the day after Thanksgiving, also known as Black Friday, which marks not only the beginning of the holiday shopping season, but arguably more importantly, the beginning of days or possibly weeks of meals made with delicious Thanksgiving leftovers.

While most Americans will be eating turkey soup, turkey sandwiches, and every other turkey dish in between, the first Thanksgiving leftovers likely catered to more diverse, if not simpler palettes, as described by former New York State wildlife pathologist Ward Stone.
