An art installation unveiled this week at a culinary college in the Hudson Valley pays homage to a revered Hudson River fish.
A 12-foot sculpture of an Atlantic sturgeon made of used cutlery was unveiled Wednesday at The Culinary Institute of America in Hyde Park. "Old Diamondsides" was created by artist John Sendelbach from more than 1,700 salvaged forks, spoons, and knives. The Atlantic sturgeon is considered one of the most important fish species in the Hudson River, which borders the CIA campus. It is closely monitored now after having served as a major economic engine of the Hudson Valley in the 19th and early 20th centuries, after which its numbers dwindled. The "diamondsides" nickname comes from the shape of its scales. The Atlantic sturgeon is the logo of the Hudson River Estuary and is the Hudson's largest fish.
